Sweet Potato & Apple Casserole

Ingredients
- 4 large sweet potatos
- 4 medium size apples
- 1/4 cup fresh orange juice
- 1/4 cup apple juice
- juice from 1 medium size lemon
- 3/4 cup light brown sugar
- 1 teaspoon cinnamon
- 2 to 4 tablespoons orange rind
- Margerine
- Pecan halves (optional)
- one 9x13 casserole dish (or two smaller dishes)
Directions
Preheat oven at 350 degrees.
Peel sweet potatos, cut in halves, then quarters.
Then steam sweet potatos for 15 to 20 minutes or until tender, then slice into 1/4 to 1/2 inch slices.
Peel and decore apples, slice in 1/4 to 1/2 inch slices.
Make sauce by mixing together orange juice, apple juice, lemon juice, light-brown sugar, cinnamon, and orange rind.
Arrange sweet potatos and apple slices in layers, alternating pattern, then covering each layer with sauce.
Make three to four layers.
Dot last layer with margerine pats.
Bake for 30 to 40 minutes or until apples become tender.
Optionally arrange pecan halves on top before serving.
