Creole Shrimp

Ingredients
- Creole Shrimp

- 1/3 C melted butter
- 1/2 C chopped onions
- 1/2 C chopped green pepper
- 1/2 C chopped celery
- 1 minced clove garlic
- 2 T flour
- 1 t salt
- 1/4 t pepper
- Dash cayenne
- 1 crushed bay leaf
- 2 1-pound 4-oz cans tomatoes
- 2 pounds shelled, deveined cooked shrimp
- 1 t sugar
- 1/4 C chopped parsley
- 3 C cooked rice

Directions
In a pot cook onions, celery, green pepper and garlic
in butter until tender. Add seasonings. Stir in flour,
sugar and tomatoes. Bring to a boil. Reduce heat.
Cook slowly for 20 minutes. Add shrimp. Cover;
cook 10-15 minutes until heated. Serve over rice;
garnish w/parsley. Serves 6.
